Maple Syrup

Maple syrup is a sweet syrup made from the sap of maple trees. In cold climates, these trees store starch in their trunks and roots before winter; the starch is then converted to sugar that rises in the sap in late winter and early spring. Maple trees are tapped by drilling holes into their trunks and collecting the sap, which is heated to evaporate much of the water, leaving the concentrated syrup. Maple syrup was first made by the Indigenous peoples of Northeastern North America. The practice was adopted by European settlers, who gradually changed production methods. The Great Canadian Maple Syrup Heist (French: vol de sirop d'érable du siècle, lit. 'maple syrup heist of the century') was the theft over several months in 2011 and 2012 of nearly 3,000 tonnes (3,000 long tons; 3,300 short tons) of maple syrup, valued at C$18.7 million (equivalent to C$24.1 million in 2023) from a storage facility in Quebec.
